Almost 10% of the recommended daily intake of vitamin C is found in 1 cup of spaghetti squash, and in that same cup there’s also vitamin A, B6, thiamin, riboflavin, niacin, folate, pantothenic acid, (all B vitamins!) and K. In addition, spaghetti squash is considered low-carb, so if you’re following a low-carb or diabetic-specific diets, spaghetti squash is a great alternative! Why not try it with your nachos?

This is my last baby’s 1st birthday. My little baby almost isn’t a baby. I never understood why people got all mopey and teary over their baby’s 1st birthday until now, when it’s our last time around the block.
